摘 要:发酵料中可溶性糖与乙醇含量是判断发酵进程的重要指标,开发糖和乙醇快速检测方法对发酵过程优化与控制非常重要。对于固体物料的检测,通常需要在检测前将固体物料中的糖和乙醇转移到液相。综述了固体物料中可溶性糖和乙醇的提取和定量检测方法,以及用于酒精固体发酵过程监控的近红外光谱定性与定量模型建立情况。最后,对固体物料可溶性糖和乙醇含量的检测技术与固体发酵过程监控技术提出建议。The content of soluble sugars and ethanol in the fermentation is key index to determine the fermentation process. The rapid determination of the content of sugars and ethanol is very important to fermentation process optimization and control. For the content determination in solid state,sugars and ethanol are usually required to transfer from solid phase to liquid phase in advance. The extraction and quantitative detection methods of soluble sugars and ethanol in solid bagasse are reviewed in this paper. Qualitative and quantitative models built by using near infrared spectroscopy in solid fermentation process of ethanol are reviewed in this paper, too. Finally, suggestions are made on the determination of soluble sugars and ethanol,as well as process monitoring technology in solid state fermentation.
