摘  要:以江西赣州筛选出结果特性良好的65个野生刺葡萄(Vitis davidii Foёx)株系为试材,研究了果实的基本理化指标(可溶性固形物、总酸、pH)及果皮中酚类物质(总酚、总花色苷、总单宁、总类黄酮、总黄烷醇)的含量分布特征,采用超高效液相色谱测定果皮中17种单体非花色苷酚类物质含量,并根据果实品质指标对刺葡萄资源进行聚类分析,以期为刺葡萄资源选育与综合利用等研究提供参考。结果表明:65个株系可溶性固形物含量为14.85°~22.40°Brix,总酸含量为4.52~7.68g·L^(-1),pH 3.27~4.68;总酚含量为15.17~99.91mg·g^(-1),总花色苷含量为4.78~48.68mg·g^(-1),总单宁含量为0.35~23.31mg·g^(-1),总类黄酮含量为1.19~35.82mg·g^(-1),总黄烷醇含量为0.77~4.60mg·g^(-1);17种单体非花色苷酚类物质中黄烷醇类含量为0~14.74 mg·kg^(-1),黄酮醇类含量为1.62~40.07mg·kg^(-1),羟基苯甲酸含量为0~72.75 mg·kg^(-1),羟基肉桂酸含量为3.14~68.53mg·kg^(-1),芪类化合物含量为0.36~4.07 mg·kg^(-1)。65株刺葡萄可聚为三大类(A、B、C),B类的2个亚群中,B1类刺葡萄果实适合作为制干和果汁加工的原料;B2类酚类物质丰富,适合酿酒或开发保健食品。The 65 representative samples of Vitis davidii Foёx Berries in Gentleman Valley of Jiangxi Province were used as experimental materials,and the basic physical and chemical indicators(total soluble solids,total acid,pH)were studied and the phenolic compounds contents in the skin(total phenol,total anthocyanins,total tannins,total flavonoids,total flavanols),the content of 17 different types of non-anthocyanins polyphenols monomer were detected by Ultra Performance Liquid Chromatography(HPLC).Moreover,the 65 samples were classified according to the quality indicators,aiming to provide reference of resource selection and breeding,and comprehensive utilization of Vitis davidii Foёx berries.The results showed that total soluble solids content was 14.85°-22.40°Brix,total acid content was 4.52-7.68 g·L^-1,pH 3.27-4.68,total phenol content was 15.17-99.91 mg·g^-1;total anthocyanins content was 4.78-48.68 mg·g^-1;total tannins content was 0.35-23.31 mg·g^-1;total flavonoids content was 1.19-35.82 mg·g^-1;total flavanols content was 0.77-4.60 mg·g^-1.In the17 non-anthocyanins polyphenols monomer,total flavanoids content was 0-14.74 mg·kg^-1;total flavonol content was 1.62-40.07 mg·kg^-1;total hydroxybenzoic acid content was 0-72.75 mg·kg^-1;total hydroxycinnamic acid content was 3.14-68.53 mg·kg^-1;total stilbene content was 0.36-4.07 mg·kg^-1.The 65 strains could be classified into 3 types(A,B,C),B1 were suitable for juice and raisin production,B2 with rich phenolic were suitable for wine production or the development of health food.
