摘 要:采用露田栽培和室内分析相结合的方法,研究不同浓度壳聚糖对番木瓜果实总酸、可溶性糖含量及糖酸比的影响。结果表明:壳聚糖明显提高了番木瓜果实开花后50 d内总酸含量,降低70~117 d总酸含量,其中0.5 g/L壳聚糖处理后的番木瓜果实可溶性糖含量和糖酸比最高。表明壳聚糖对提高番木瓜品质和风味具有一定效果,0.5 g/L为最适浓度。The effects of chitosan of different concentrations on total acid content, soluble sugar content and sugar/acid of papaya were analyzed by field cultivation and indoor analysis. The results showed that chitosan increased the total acid content of papaya fruit within 70 days of treatment but obviously decreased the total acid content after 70 days of the treatment. Of all the treatments the papaya fruit treated with chitosan at a concentration of 0.5 g/L gave the highest soluble sugar content and the highest sugar/acid ratio. This indicated that chitosan could increase the quality and flavour of papaya, and that the best concentration of chitosan was 0.5 g/L.
