摘  要:[目的]研究Lyoflora V_3乳杆菌对亚硝酸盐降解的影响,优化其降解条件。[方法]探讨了乳酸菌降解亚硝酸盐的影响因素,主要包括溶液pH、接种量、Na Cl含量和培养时间。采用L_9( 3~4)正交试验对整体工艺进行试验条件优化。[结果]影响乳酸菌降解亚硝酸盐的各因素次序为pH>接种量>Na Cl含量>培养时间,最佳降解条件:pH为3.0,接种量为5%,Na Cl含量为9%,培养时间为72 h。在最佳降解条件下,乳酸菌降解亚硝酸盐的降解率可达98.50%。[结论]该研究可为乳酸菌发酵工艺中亚硝酸盐的控制提供参考。[Objective]To study the effect of Lactobacillus Lyoflora V3 on nitrite degradation and optimize its degradation conditions. [Method]Factors influencing degradation of nitrite by Lactobacillus were discussed,including pH,inoculation quantity,Na Cl content and inocubation time.L9( 34) Orthogonal design was adopted to optimize the overall process.[Result]The results show that the order of factors affecting the degradation of nitrite by Lactobacillus is: pH inoculation quantity Na Cl content inocubation time. The best conditions were pH 3. 0,inoculation quantity5%,NaCl content 9%,inocubation time 72 h. Under the best degradation conditions,the degradation rate of lactic acid bacteria can reach 98.50%.[Conclusion]The study can provide a reference for the control of nitrite in the fermentation process of lactic acid bacteria.
