摘  要:为了探明"大石早生"李果实香气成分种类和含量,采用顶空固相微萃取结合气相色谱与质谱联用技术对同为商熟期的大棚栽培和露地栽培"大石早生"李果实的香气成分进行检测分析和比较。结果表明,从采用两种栽培方式的李果实中共检测出56种香气成分,其中21种成分为二者共有,相对含量较高的成分有乙酸丁酯、乙酸乙酯、乙酸己酯、己醛和反式-2-己烯醛等,二者香气成分种类和相对含量均有显著差异,其中大棚栽培果实香气成分种类和相对含量均高于露地栽培果实,这可能是受生长环境影响。To investigate the major aroma components in "Oishiwase" plum at commercial stage, headspace solid phase microextraction(HS-SPME) combined with gas chromatography mass spectrometry(GC/MS) was employed. The results showed that 56 aroma components were identified, and 21 kinds of these were common to plum in open field and plastic tunnel. Among all the aroma components, butyl acetate, ethyl acetate, hexyl acetate, hexanal and trans-2-hexenal, etc. showed higher relative contents. Significant differences were found in relative contents and variety of aroma components. It was concluded that aroma components of plums planted in plastic tunnel showed better than those in open field.
