摘  要:采用氯化钠、异抗坏血酸钠(异Vc钠)的方法对新鲜茶树菇进行护色处理,以不护色处理对照组,再经热风干燥后分装贮藏,在贮藏过程中每隔7d测定干品茶树菇白度、多酚、粗多糖含量的品质变化情况。结果表明:随着储藏时间的变化,护色处理和对照组茶树菇的白度、多酚、粗多糖均呈下降趋势,经护色处理的茶树菇白度显著高于对照组,多酚及粗多糖含量也高于对照组。By using the combination of NaCI and sodium euthorbate immersion method to protect the color of Agro- cybe aegerita, no color-protection as a control group, then dried with hot air dispensing storage, during storage the dry system whiteness, polyphenols and crude polysaccharides content changes were measured every 7 days.The re- sults indicated that whiteness, polyphenols, and polysaccharides of Agrocybe aegerita in all groups showed a decreas- ing trend with the increase of storage time, While the contact of whietness, polyphenol and polysaccaridein was obvi- ous higher in color-protected Agrocybe Aegerita than control groups.
