摘　　要：本文以食源性致病微生物作为目标菌,利用PCR技术,建立一种快速高效检测冻肉中致病微生物的PCR反应体系。并对反应体系的灵敏度和特异性进行检测分析,得到最适合的快速检测食物中致病微生物的方法。With foodborne pathogenic microorganisms as the target bacteria, a PCR reaction system forrapid and efficient detection of pathogenic microorganisms in frozen meat was established using PCRtechnology. The sensitivity and specificity of the reaction system were analyzed to obtain the most suit-able method for rapid detection of pathogenic microorganisms in food.
