摘　　要：脂肪模拟品作为脂肪替代品的一部分,其安全可靠性得到了国内外的广泛研究。本文从脂肪模拟品全球申请量趋势、区域分布、技术分支等方面,对以蛋白质和碳水化合物为基质的脂肪模拟品专利申请进行了分析。Fat mimics, as a part off fat replacers,have been widely studied on safety and reliability. This article aims to search and collect global patent documents on protein-based fat mimics and carbohydrate-based fat mimics, and analyze the patent applications on the aspects of application trend, regional distribution and technology branch.
