摘  要:通过测定EGCG对大肠杆菌杀灭过程中的Zeta电位和颗粒粒径,判断了EGCG和大肠杆菌的结合特性;通过傅里叶红外光谱法测定了EGCG和大肠杆菌作用前后的官能团变化,确定大肠杆菌细胞的破坏情况及EGCG起主要杀菌作用的官能团。结果表明:EGCG和大肠杆菌的电荷属性有利于EGCG发挥杀菌性能;离子的存在会影响EGCG的活性官能团;EGCG杀灭大肠杆菌的机理是先通过其结构中酚羟基的氢键与碱性氨基酸侧链的氮原子相互作用,嵌入大肠杆菌细胞内,抑制大肠杆菌细胞膜孔蛋白的功能,最终导致大肠杆菌细胞死亡。Disinfection is the key measure to ensure the safety of drinking water. The common disinfection methods have some limitations, such as disinfection by-products. At present, researchers applied the green resource polyphenols, which had various physiological functions and wide antimicrobial activities, to the disinfection of drinking water, and confirmed the bactericidal and bacteriostatic properties of tea polyphenols and the practicability of disinfection of drinking water. By measuring EGCG of Zeta potential and particle killing Escherichia coli in the process of particle size, the killing characteristics of EGCG and Escherichia eoli were studied, its functional groups variation before and after EGCG killing Eseherichia coli by Fourier transform infrared spectroscopy was determined for evsuring the functional destruction of Escherichia coli cells, and the main groups of EGCG played a bactericidal effect. The results showed that the charge properties of EGCG and Eseherichia coli was conducive to play a bactericidal performance; ion could influence the activity of functional groups of EGCG; the mechanism of EGCG killing Escherichia eoli was that hydrogen bonded through the nitrogen atom and basic amino acid side chain of phenolic hydroxyl groups in the structure of the interaction, and embedded in Eseherichia coli cells. The main function inhibition of Escherichia coli cell membrane protein resulted in cell death of Escherichia coll.
