摘  要:[目的]分析新疆褐牛屠宰性状的主成分。[方法]对伊犁天西养殖公司提供的33头、32~34月龄育肥新疆褐牛阉牛的产肉性能及牛肉质量进行测定;同时对胴体分割性状、优质切块做主成分分析。[结果]经测定新疆褐牛屠宰率达59.45%,胴体重、屠宰率均高,已达到世界平均水平,上脑、外脊、眼肉3块高档肉与活体重、胴体重呈强度正相关,胴体分割性状的前6个主成分累计贡献率达到81.24%。[结论]从特征根与贡献率来看,第1主成分反映了新疆褐牛牛体发育情况,参考第1主成分来指导生产更具有现实意义。[Objective] The research aimed to analyse the main components of the slaughter traits of Xinjiang brown cattle. [Method]33 Xinjiang brown cattle were provided by Yili Tianxi Breeding Company.The main components of the carcass segmentation characters and high quality cuts were also analyzed. The meat performance and beef quality of 32-34 month old fattening Xinjiang brown cattle steers were determined. [Result]This experiment showed that the slaughter rate was 59.45%, and the carcass weight and slaughter rate were high and had reached the world average. There were positive correlations between high-grade meat and live weight and carcass weight of the upper brain, outer ridge and eye meat. The carcass was divided into traits. The cumulative contribution rate of the first six principal components reached 81.24%. [Conclusion] From the perspective of eigenvalues and contribution rates, the first principal component reflects the development status of Xinjiang brown cattle, and referring to the first principal component to guide production is more practical.
