摘  要:为探索野生玫瑰果成熟过程中类胡萝卜素变化规律及与色泽的相关性,以野生玫瑰果品系-1和品系-3为实验材料,分别利用HPLC和色差仪对果皮和果肉中的叶黄素、玉米黄质、β-胡萝卜素、番茄红素和颜色特征值进行了分析。结果表明,2个品系果皮和果肉中都含有4种类胡萝卜素,随着果实的成熟,色素含量逐渐增加,采收时达到最高;品系-1 4种类胡萝卜素含量显著高于品系-3,品系-1果皮中4种类胡萝卜素含量显著高于果肉,是良好的类胡萝卜素资源。果皮中4种类胡萝卜素含量与亮度、黄色度呈显著的负相关,果肉中的叶黄素、β-胡萝卜素、番茄红素3种类胡萝卜素含量与亮度、黄色度呈显著的负相关,果皮和果肉中的4种类胡萝卜素含量与红色度均无显著的相关性。Taking two strains of wild Rose rugose Thunb, namely, No.1 and No.3, as materials, the content of lutein, zeaxanthin, β-carotene, Lycopene in the flesh and the peel of wild Rose rugose Thunb and the color value were measured by HPLC and colorimeter, in order to explore the transformation of carotenoids and the correlation with the color value. The results show that: There are four types of carotenoids in the flesh and the peel of No.1 and No.3, the content of the four types of carotenoids gradually increased with the maturity of the fruit and could be the highest at the harvest time; the content of No.1 was significantly higher than that of No.3. For No.1, four types of carotenoids mainly concentrated in the peel, and it's a good carotenoids source. The content of lutein, zeaxanthin, β-carotene, lycopene in the peel of wild Rose rugose Thunb was correlated significantly negatively with L~* and b~*; The content of lutein, β-carotene, lycopene in the flesh was correlated significantly negatively with L~* and b~*; The content of lutein, zeaxanthin, β-carotene, lycopene in the peel and flesh was not correlated with a~*.
