摘 要:目的探究黑米色素的最佳提取工艺。方法试验采用浸提法提取黑米色素。以吸光度为考察指标,分别考察浸提温度、浸提时间、料液比各单因素在不同水平下对色素提取效果的影响,利用正交试验法确定黑米色素提取的最佳工艺。结果影响黑米色素提取因素主次顺序为:浸提温度>料液比>浸提时间。最佳提取工艺为:以蒸馏水浸提,浸提温度90℃,浸提时间30 min,料液比1∶15(g/m L)。结论黑米色素提取方法简易,成本低,是作为天然色素的极优选择。Objective To study the extraction process of black rice pigment. Methods The black rice pigment wasextracted by the extraction method in this experiment. Absorbance was selected as an index. The effect of the extractiontemperature,extraction time and liquid-solid ratio on the extraction of pigment was investigated. The optimum extrac-tion process of black rice pigment was determined by orthogonal test. Results The main factors affecting the extrac-tion of black rice pigment were extraction temperature 〉 solid-liquid ratio 〉 extraction time. The best extraction processwas water extraction,and extraction temperature 90 ℃,extraction time 30 min,material to liquid ratio was 1∶ 15(g /mL). Conclusion The extraction method of black rice pigment with low cost is easy,and is also a excellent choiceas a natural colouring material.
