摘 要:【目的】探明低温等离子体杀菌对梨汁中酚类物质的影响。【方法】以梨汁为原料,在前期试验确定的最优低温等离子体杀菌工艺的条件下进行杀菌处理,并与巴氏杀菌和超高温瞬时杀菌做对比,提取杀菌后梨汁中的酚类物质,利用高效液相色谱法分离测定不同条件杀菌后梨汁中酚类物质的变化。【结果】新鲜的梨汁和低温等离子体杀菌后的梨汁中均共检测出6种酚类物质,熊果苷、儿茶素、绿原酸、表儿茶素、咖啡酸、香豆酸,巴氏杀菌中只检测出了2种物质,儿茶素和香豆酸,超高温瞬时杀菌处理,只检测出了3种物质,为没食子酸,儿茶素,香豆酸,且低温等离子体有效的保持了75.14%的酚类物质,而超高温瞬时杀菌和巴氏杀菌的酚类物质保留率仅为14.18%和13.86%。【结论】因此,新兴的非热低温等离子体杀菌更好的保存了梨汁的品质,具有良好的发展前景。【Objective】The objective of the study was to discuss the effect of low temperature plasma sterilization on phenolic compounds of pear juice,【Methods】the juice was directly and indirectly exposed to a low temperature plasma with the condition of the optimalprocess determined by previous experiments and compare with pasteurization,extract phenolic compounds from pear juice after sterilization were determinated useing HPLC method. 【Results】6 kinds of phenolic compounds were detected in fresh pear juice and pear juice with low temperature plasma(arbutin, gallic acid, catechin, epicatechin, caffeic acid, and coumaric acid).2 kinds of phenolic compounds were detected in pear juice with pasteurization (catechin and coumaric acid).3 kinds of phenolic compounds were detected in pear juice with ultra high temperature (gallic acid, catechin and coumaric acid).75.14% phenolic compounds was kept effectively by low temperature plasma, while the phenolic compounds by ultra high temperature and pasteurization were kept 14.18% and 13.86%.【Conclusion】Therefore, the low temperature plasma sterilization preserves the quality of pear juice better, and has a good development prospect.
