摘  要:为分析大豆7s球蛋白β-伴大豆球蛋白不同亚基氨基酸组成对大豆营养品质的影响,利用生物信息学软件(BIOEDIT,DNAMAN)对已在Gen Bank数据库中注册的大豆7s球蛋白β-伴大豆球蛋白亚基氨基酸序列分析各亚基氨基酸组成、比对氨基酸序列。结果表明,3种亚基中色氨酸、蛋氨酸、半胱氨酸含量较低,其中β-亚基不含色氨酸;3种亚基富含谷氨酸和亮氨酸,其中α-亚基谷氨酸最高,为13.16%,β-亚基中亮氨酸的含量最高,为10.48%。谷氨酰胺、精氨酸、丝氨酸的含量也较高。氨基酸序列比对分析结果表明,序列保守位点较多,同源进化树分析证明3种亚基亲缘关系较近。To study the effect of amino acid composition of different subunits of 7 s globulin(β-conglycinin)on the nutritional quality of soybean, the amino acid sequence compositions and comparison of 7 s globulin(β-conglycinin) subunit of soybean submitted to Gen Bank database were studied by means of bioinformaticssoftware(BIOEDIT and DNAMAN). The results showed that the contents of tryptophan, methionine and cystinein the three subunits were lower, and the β-subunit was free of tryptophan. The three subunits were rich inglutamic acid and leucine, the content of glutamic acid was the highest in α-subunit, which was 13.16%, andthe content of leucine in β-subunit was the highest, which was 10.48%. Glutamine, arginine and serinecontent were also relatively high. Amino acid sequence alignment analysis showed that there were moreconserved sequences, and the homologous tree showed that the genetic relationship among the three subunitswas close.
