摘 要:以沙棘浸膏作为糖类化合物,加入氨基酸进行美拉德反应,并采用同时蒸馏萃取和气相色谱-质谱联用仪对沙棘浸膏、沙棘浸膏美拉德反应物的香味化合物进行分离和鉴定,共鉴定出沙棘浸膏的香味成分29个化合物,而沙棘浸膏美拉德反应物的香味成分共鉴定出52个化合物,并且鉴定出吡嗪类、呋喃类香味物质,占挥发性成分比例较大,此类化合物赋予沙棘浸膏美拉德反应物具有焦糖、烘烤和坚果等特征香味。将此反应物用于卷烟加香,不仅能提高卷烟烟香,而且具有细腻烟气、减少杂气、改善余味等作用。Sea buckthorn extract was used as a saccharide compound and amino acid was added for Maillard reaction. Simultaneous distillation and extraction and gas chromatography-mass spectrometry were used to separate and identify the aroma compounds of seabuckthorn extract and Maillard reaction products. 29 aroma compounds were identified from seabuckthorn extract and 29 aroma compounds from seabuckthorn extract were identified. A total of 52 compounds were identified and pyrazine and fhran aroma compounds were identified, which accounted for a large proportion of volatile components. These compounds endowed the merad reaction of seabuckthorn extract with caramel, baking fragrance and nut fragrance characteristics. The application of this reactant in cigarette flavoring can not only improve the aroma of cigarettes, but also have the functions of fine smoke, reducing impurities and improving aftertaste.
