摘 要:固态白酒中杂醇油的含量和比例,直接影响到酒体质量和风格。经研究发现,杂醇油不仅与原料种类有关联,而且不同窖龄、不同糟层、不同馏酒温度、不同入窖温度、不同摘酒模式、不同基酒香型等,都会直接影响杂醇油含量与比例。通过对杂醇油分布规律的解析,有助于从多角度对杂醇油生成进行调控,从而稳定和提高酒体口感质量。The content and proportion of fusel oil in Baijiu by solid-state fermentation will directly influence the quality and the style of Baijiu. The researches revealed that fusel oil content and proportion is not only associated with raw material varieties, but also correlated with techniques including different pit age, different fermented grains layer, different distilling temperature, different pit-entry temperature, different liquor-collecting mode, and different base liquor flavor types. Through the analysis of the distribution rules of fusel oil, we can control and regulate fusel oil from multiple angles, thus stabilizing and improving liquor taste and quality.
