摘 要:为明确扁豆功能成分花青素的积累规律,测定了23个扁豆资源3个发育时期(结荚鼓粒初期(1)、结荚鼓粒中期(2)、结荚鼓粒末期(3))的3个部位(豆粒(A)、荚皮(B)、豆荚(AB))花青素含量,分析各扁豆资源的不同部位在不同发育时期的花青素的积累规律。结果表明,扁豆不同部位花青素积累在各时期差异显著,其中在豆粒中表现为1A<2A<3A,以成熟豆粒中花青素含量最高;荚皮表现为1B>2B>3B,以幼嫩豆荚皮中花青素含量最高;豆荚表现为1AB>2AB>3AB,以幼嫩豆荚中花青素含量最高。各部位的花青素含量高低极差都在60%以上。花青素含量以27号扁豆资源的表现最优。In order to clarify the accumulation law of the lentils anthocyanin, the concentration of anthocyanin in seed(A), skin of pod(B) and pod(AB) of twenty-three resources of lentils was examined in three developmental stages: the early podding stage(1), the middle podding stage(2) and the late podding stage(3). The results showed that the accumulation of anthocyanins in different parts of lentils varied significantly in different stages, in seed the order was 1 A2 A3 A. The concentration of anthocyanin of the late podding stage(3) in seed(A) was the highest.in skin of pod(B) the order was 1 B2 B3 B, the concentration of anthocyanin was the highest in the early podding pod, and the concentration order in the pod(AB) was the same as the skin of pod(B): 1 AB2 AB3 AB. The range of maximum and minimum anthocyanin content of each part of lentils was higher than 60 percent, and No.27 lentils was the best resource of anthocyanin.
