摘 要:目的 调查评价晋城地区市售婴幼儿谷类辅助食品卫生状况,为相关部门进行风险评估提供基础数据。方法 采集晋城地区2013年-2016年市售婴幼儿谷类辅助食品进行阪崎肠杆菌、蜡样芽胞杆菌以及卫生指标菌检测。结果 112份婴幼儿谷类辅助食品中,菌落总数超标率16. 96%,大肠菌群超标率8. 03%,致病菌检出率为37. 50%,其中阪崎肠杆菌16. 07%,蜡样芽胞杆菌21. 43%。进口婴幼儿谷类辅助食品中大肠菌群超标率(21. 43%)高于国产食品(6. 12%),差异有统计学意义(χ^2=3. 883,P 〈0. 05)。整袋或罐装类型谷粉的菌落总数超标率(30. 43%)高于内置独立小袋包装类型(3. 45%),差异有统计学意义(χ^2=12. 144,P 〈0. 001),前者大肠菌群超标率(26. 09%)高于内置独立小袋包装类型(3. 45%),差异有统计学意义(χ^2=9. 483,P 〈0. 05)。结论 晋城地区市售婴幼儿谷类辅助食品具有潜在的食品安全隐患。Objective To evaluate the sanitary conditions of cereal-based complementary foods for infants so as to provide risk for relevant department to perform risk evaluation in Jincheng. Methods Food samples were collected for the detections of Enterobacter sakazakii and Bacillus cereus in Jincheng during 2013-2016. Results Among the 112 cereal supplements for infants and young children,the total number of colonies exceeded 16. 96%,the exceeding rate of coliform bacteria was 8. 03%,and the detection rate of pathogenic bacteria was 37. 50%,including Enterobacter sakazakii( 16. 07%) and Bacillus cereus( 21. 43%). The over-standard rate of coliform bacteria in imported cereals and supplementary foods( 21. 43%) was higher than that of domestic foods( 6. 12%),and the difference was statistically significant( χ^2= 3. 883,P < 0. 05). The over-standard rate of the total number of colonies in whole bag or canned cereal flour( 30. 43%) was higher than that of the independent pouch packaging( 3. 45%),with the difference statistically significant( χ^2= 12. 144,P < 0. 001). The exceeding rate of coliform in whole bag or canned cereal flour( 26. 09%) was higher than that in the independent pouch packaging( 3. 45%),and the difference was statistically significant( χ^2= 9. 483,P < 0. 05). Conclusion There are some food safety hazards of cereal-based complementary foods for infants and young children in Jincheng.
