摘  要:大豆胚芽是大豆加工副产物,用其提取得到的胚芽油,富含不饱和脂肪酸、维生素E、植物甾醇等活性物质。该文着眼大豆胚芽的综合利用,开发富含维生素E等功能性成分的大豆胚芽油,并将其制成微胶囊,不仅充分发挥了大豆胚芽油的营养和保健功能,也可增强脂肪酸及其维生素E的稳定性。该文对大豆胚芽油的制备、精炼及其微胶囊化的工艺进行了研究。研究结果为大豆胚芽的合理有效利用提供了有价值的参考依据,具有一定的理论意义和较大的实际应用价值。The soybean embryo are the by-products in soybean processing,the soybean embryo oil is extracted from them,the oil contains high content of unsaturated fatty acid,Vitamin E,phytosterol,and other activity substance.This thesis focuses on utilizing the soybean embryo and developing the soybean embryo oil with high content of Vitamin E and other functional ingredients,and then the oil is made to microencapsulations,which not only makes Vitamin E the oil represent its rich nutrition,but also makes the fatty acid and Vitamin E more stable.In this thesis,we mainly study the technics of extracting the soybean germ oil,and its refining and microencapsulation.The results can offer a valuable reference on rational and effective utilization of soybean germs,and also have definite theoretical and practical significances.
