摘　　要：利用过氧化苯甲酰可以定量氧化对羟基苯硼酸产生对羟基苯酚的原理,以对羟基苯酚作为电化学探针,发展了一种新的间接检测面粉中过氧化苯甲酰的方法。在含1.0 mmol·L^(-1)对羟基苯硼酸的0.05 mol·L^(-1)p H8.9 Tris–HCl缓冲溶液(含20%无水乙醇)中,该方法可以检测1.0μmol·L^(-1)到1.0 mmol·L^(-1)的过氧化苯甲酰,检测限为0.2μmol·L^(-1),比国标推荐使用的气相色谱法和高效液相色谱法的灵敏度高。而且该方法检测电位低,抗干扰能力强,重现性好,具有快速、简单、低成本的优点。利用该方法对市售面粉中的过氧化苯甲酰进行快速检测,得到了很好的回收率,为面粉中过氧化苯甲酰的快速检测提供了新的思路。A new method for the indirect detection of benzoyl peroxide in flour was developed based on boronate oxidation of phydroxyphenylboronicacid by benzoyl peroxide. This method using easily detectable p-hydroxyphenol which is produced from the reactionof benzoyl peroxide and p-hydroxyphenylboronic acid as an electrochemical probe,and this method can detect benzoyl peroxidein the range of 1. 0 μmol·L-1 to 1. 0 mmol·L-1 in 0. 05 mol·L-1 pH 8. 9 Tris – HCl buffer solutions containing 1. 0 mmol·L-1p-hydroxyphenylboronic acid. The detection limit was 0. 2 μmol·L-1 which is much lower than that with gas chromatograph and highperformance liquid chromatograph. Additionally,the method showed good selectivity,reproducibility and stability. The method wasquick,simple and cheap which was applied to determination of benzoyl peroxide in real flour samples with satisfactory results.
