摘 要:土壤镉污染已成为制约我国农产品卫生质量安全的重要因素。茶叶作为传统饮品一直以来广受消费者喜爱,为了防止镉污染事件的发生,加强对茶叶镉含量的监管与控制是保障茶叶食品安全的重要举措。因此综述了我国茶叶镉污染状况,包括茶园土壤及茶叶的镉含量水平及茶叶镉的浸出特征,阐述了风险评估在镉等重金属安全评价中的研究与应用,包括风险评估对制定、修订食品安全标准的重要意义,并在此基础上提出了尽快制定茶叶镉含量最大限量指标的建议,以保障饮茶安全。Cadmium pollution has become an important factor restricting the quality and safety of agricultural products in China.As atraditional drink,tea has been widely loved by consumers.In order to prevent the occurrence of cadmium pollution incidents,strengtheningthe supervision and control of cadmium content in tea is an important measure to ensure the food safety of tea.Therefore,the cadmiumpollution status of tea in China is reviewed,includes the content of cadmium in tea and garden soil and the leaching characteristicsof cadmium in tea leaves,describes the research and application of the risk assessment on cadmium and other heavy metals in safetyevaluation,includes the significance of risk assessment on the formulation and revision of the food safety standards,on this basis,thesuggestion of making the maximum limit of cadmium content of tea as soon as possible is put forward,in order to ensure the safety of tea drinking.
