摘 要:目的通过建立豆粉品质测量模型检测市售豆粉蛋白质含量,便于了解市售豆粉真伪的现状。方法购于大型超市豆粉和不同产地大豆粉碎所得样品共33份,其中定标集样品23份,预测集样品10份。另设定标集的阳性对照12份,掺假预测样品3份。运用凯氏定氮法测定豆粉蛋白质的化学值、波通DA7200近红外谷物品质分析仪收集光谱图、光谱数据分析软件Unscrambler分析光谱、PLS法建立豆粉品质测量模型,并对预测集样品进行蛋白质值的预测。结果成功建立豆粉品质测量模型,运用模型预测样品成分,通过比较预测值与实际值,模型的效果良好。表征相关方程为Y=1.0111X-0.4548,决定系数R2=0.9869,定标标准偏差(SEC)为0.0912;预测集化学真值与预测值相关推断方程为Y=0.9591X-1.6397,决定系数R2=0.9853,预测标准偏差(SEP)为0.0959。预测残差均较小,蛋白质含量实测值和预测值的残差之和为-0.03。结论大型超市售卖豆粉未检出掺假现象,散卖商户掺假豆粉的检出率为100%。Objective To establish a soybean powder quality measurement model to detect t he content o f commercially available soybean prote in and to understand the status quo of the authenticity of commercially available soybean meal.Methods A total of33samples were obtained from large-scale supermarket soybean meal and soybean soda from different areas.Among them,23samples were set and10samples were prepared.Another set of positive control set of12copies,adulterated prediction of three samples.Quantitative analysis of spectrophotograms,spectral data analysis software Unscrambler analysis spectroscopy and PLS method were used to establish the model of soybean flour quality measurement,and the samples were prepared by using Kjeldahl method.Prediction of protein values.Results The model of soybean f lour quality was successfully established.The model was used t o predict the s ample composition.By comparing the predicted value with the actual value,the model was effective.The correlation equation is Y=1.0111X-0.4548,the coefficient of determination is R2=0.9869,and the calibration standard deviation(SEC)is0.0912.The prediction equation is Y=0.9591X-1.6397,and the coefficient R2=0.9853,the predicted standard deviation(SEP)was0.0959.The predicted residuals are small,the sum of the measured values of the protein content and the predicted values is-0.03.Conclusion The results showed that the detection rate of adulterated soybean powder was100%.
