摘　　要：采用扫描电镜系统研究食品级磷酸钠盐微观结构,对比了不同磷酸钠盐的微观结构,分析了同一磷酸钠盐在不同工艺条件下的微观结构差异。研究表明,磷酸钠盐的微观结构与聚合温度、反应工艺、进料方式等关系较大。利用扫描电镜分析食品级磷酸盐的微观结构,可对产品定向改进起到一定的指导作用。The microstructure of food sodium phosphates was studied systematically by scanning electron microscope.The microstructure of different sodium phosphates was compared,and the microstructure of the same sodium phosphate under different process conditions was analyzed.Research showed that the microstructure of sodium phosphate was closely related to polymerization temperature,reaction process,feed method and so on;scanning electron microscope used to analyze the microstructure of food phosphates played a vital role in directional modification of phosphate products.
