摘 要:分析肉条尺寸对猪肉滴水损失测定值的影响,为进一步规范猪肉滴水损失的测定方法提供必要的理论依据。采用套袋法测定了2 cm×3 cm×5 cm和4 cm×4 cm×4 cm两种尺寸下市售鲜猪肉倒数第4至最末肋骨间背最长肌的滴水损失,分别计算了各自的重复力和平均组内变异系数,分析了不同测量次数下的相对准确度并确定了最宜重复度量次数,采用T检验比较了肉条尺寸对猪肉滴水损失测定值的影响。结果发现,2cm×3cm×5cm和4cm×4cm×4cm两种尺寸下,所测样本滴水损失的重复力分别为0.7460和0.7629,平均组内变异系数分别为14.70%和10.52%。4 cm×4 cm×4 cm尺寸下所测样本滴水损失的重复力略高,而平均组内变异系数略小。随着测量次数的增加,滴水损失的相对准确度均进一步提高。滴水损失的重复力高,最适宜度量次数为2次。两种肉条尺寸下滴水损失测定值间比较表明:50%样品滴水损失测定值,在两种肉条尺寸间无显著差异(P>0.05);50%样品滴水损失测定值,2cm×3cm×5cm组显著或极显著高于4cm×4cm×4cm组(P<0.05或P<0.01)。肉条尺寸对猪肉滴水损失测定值及样品间滴水损失测定值的高低排列顺序产生一定影响,建议出具检测报告须加注肉条尺寸,便于样品间的横向比较。The experiment was conducted to analyze the effect of the size of meat on drip loss in pork and provide the necessary theoretical basis for method for determination of drip loss of pork.The end of fourth to the last rib between longissimus muscles of commercially available fresh pork were split into2cm×3cm×5cm and4cm×4cm×4cm to determine drip loss by the bag method.The repeatability and average intra-class variation coefficient of drip loss in two kinds of size were calculated.The relative accuracy under the different number of measurements was analyzed and the most appropriate number of repeated measurement was determined.The effect of the size of meat on the value of drip loss in pork was used to compare by T test.The results showed that the repeatability of samples were0.7460and0.7629respectively,and the average intra-class variation coefficient of the samples were14.70%and10.52%respectively.The repeatability of the drop loss measured in4cm×4cm×4cm was slightly higher than that in2cm×3cm×5cm,while the average intra-class variation was slightly smaller.With the increase of the number of measurements,the relative accuracy of drip loss was further improved.Drip loss is a highly repetitive trait and the most appropriate number of repeated measurement of drip loss is2.Comparison between measured values showed that the drop loss of50%samples were not significantly different(>0.05)in two kinds of the size of meat,while that of the other50%samples in2cm×3cm×5cm were significantly or extremely significantly higher than that in4cm×4cm×4cm(<0.05or<0.01).The size of meat has a certain impact on the values and the level of order of drip loss in pork.For comparison between samples,the size of meat should be labelled in the inspection reports.
