摘　　要：综述了我国近年来稻米品质检测技术的研究现状与应用。从碾米品质、外观品质、营养品质、蒸煮品质、食味品质5个方面阐述了稻米品质检测技术的研究进展与应用以及存在的问题,并对今后稻米品质检测技术的发展作出展望。The research status and application of rice quality detection technology in recent years in China are reviewed.The research progress,application and existing problems of rice quality detection technology were expounded from5aspects of rice milling quality,appearance quality,nutritional quality,cooking quality and eating quality.The future development of rice quality detection technology was prospected.
