摘 要:【目的】研究西门塔尔及其杂交牛肉中重金属含量的差异,分析背最长肌与饮水、精、粗饲料重金属含量的相关性.【方法】采集西门塔尔、安西杂牛、和西杂牛背最长肌及养殖场饮水和精、粗饲料,按国标方法检测Pb、Cd、As、Cr、Hg含量并进行差异比较和相关性分析.【结果】所检测重金属含量均在限量标准范围内.和西杂牛的Pb、As、Cr含量显著低于西门塔尔牛(P<0.05),安西杂牛Cd含量显著高于西门塔尔牛(P<0.05),和西杂牛Hg含量显著高于西门塔尔牛(P<0.05);两杂牛间比较,安西杂牛的Pb、Cr、Cd、As含量均高于和西杂牛,且Pb、Cr含量差异显著(P<0.05),Hg含量低于和西杂牛,但差异不显著(P>0.05).【结论】西门塔尔牛及其杂交肉牛在相同饲养环境下,背最长肌中重金属离子的蓄积量没有呈现相同的规律.背最长肌Pb、Cd含量与粗饲料相关性较高,Cr、As含量与精饲料相关性较高,Hg含量与水体相关性较高.【Objective】The purpose of the experiment was to study the difference in heavy metals in Simmental and its hybrid cattle and analyze the correlation between water and feed.【Method】Collecting longissimus dorsi muscle of Simmental,Anxi and Hexi hybrid cattle,water and feed to determine the content of Pb,Cd,As,Cr,Hg in accordance with the national standard method and analyze the differences and correlation.【Result】The content of heavy metals were within the limit standard range.The content of Pb,As and Cr in Hexi hybrid cattle was significantly lower than that in Simmental(P<0.05),the content of Cd in Anxi hybrid cattle was significantly higher than that in Simmental(P<0.05),the content of Hg in Hexi was markedly higher than that in Simmental(P<0.05).The content of Pb,Cr,Cd,As was all higher than that in Anxi and the difference in Pb and Cr was significant(P<0.05).The content of Hg was lower than that in Anxi and the difference was not significant(P>0.05).【Conclusion】The accumulation of heavy metals in the longissimus dorsi muscle of Simmental and hybrid cattle under the same breeding environment did not show the same law.The correlation between Pb,Cd of longissimus dorsi muscle and roughage was higher,the correlation between Cr,As and concentrate was higher,and the correlation between Hg content and water was higher.
