摘  要:食品安全越来越引起人们关注,并且人们主要关注食品的质量安全,包括食物的污染、是否有毒,添加剂是否违规超标等。针对这些危害人体健康的物质我们常对其进行限量规定,常用的方法主要是色谱法由于其局限性:样品制备繁琐,仪器精密度要求较苛刻,耗时,所以人们渐渐开拓了新的检测手段,其中SERS技术是一种简便且快速的检测技术,采用该技术对样品前处理简单,可用于现场快速筛查。就SERS技术及其在食品安全领域的应用展开论述。Food safety is attracting more and more attention.People pay much attention to food quality and safety,including food pollution,toxicity,additive,etc.As for these materials which were endangering human health,chromatography was commonly used to limit the dosage of them.However,some new testing methods were gradually developed due to the limitations of chromatography such as time-consuming,complicated in sample preparation and hard precision requirement.Surface Enhanced Raman Scattering(SERS)technique is a simple and rapid detection technology,whose sample pretreatment is simpler and less time-consuming.It is efficient,reliable,quick and easy.So it can be used for the rapid screening or laboratory preview.SERS technique and its application in food safety were discussed.
