摘  要:为了提高低值茶叶的利用率,以茶叶加工中的下脚料为研究对象,采用超声波和机械化学法辅助提取茶末中的茶多酚。筛选了碱助剂的组成,确定了提取液的pH,分别探讨了超声波功率、处理时间和料液比对茶叶茶多酚提取率的影响。比较了热水浸提法、超声波辅助提取法、机械化学法辅助提取法、超声波和机械化学辅助法对茶叶茶多酚提取率影响。结果表明:用Na_2CO_3和Na_2B_4O_7作为碱助剂,并按与茶叶下脚料质量比为8%进行超微粉碎时,茶叶下脚料茶多酚提取率最高。超声波和机械化学辅助法提取茶叶中茶多酚比热水浸提法、超声波辅助提取法和机械化学法辅助提取法的提取率更高。In order to improve the utilization rate of low value tea,the tea polyphenols from low value teas were extracted by ultrasonic and mechanochemical methods.The composition of the alkali auxiliaries was screened and the pH of the extract was determined.The effect of ultrasonic power,treatment time and liquid ratio on the extraction rate of tea polyphenols was discussed.The effect of water extraction,ultrasonic assisted extraction and mechanochemical assisted extraction on the extraction rate of tea polyphenols was compared.The results showed that the extraction rate of tea polyphenols was the highest when Na2 CO3+Na2 B4 O7 were used as alkali auxiliaries,and the ratio of tea to leftovers was 8%.Ultrasonic assisted extraction and mechanochemical assisted extraction rate was higher than that of hot water extraction,ultrasonic assisted extraction and mechanochemical assisted extraction rate.
