摘  要:本文以柑橘皮为原料制备低酯果胶,研究了高酯果胶铝盐析物直接碱溶脱酯过程。实验表明,高酯果胶铝盐析物直接碱溶脱酯,随着溶液碱性增加及脱酯时间的延长,果胶产品的酯化度、质量收率与半乳糖醛酸含量均有不同程度降低。在p H值9.0溶液中高酯果胶铝盐析物脱酯30min,低酯果胶的质量收率为8.43%(以干柑橘皮为基准),低酯果胶产品中半乳糖醛酸含量与酯化度分别为82.5%与40.5%。The low methoxy pectin was prepared from citrus peel,the process of direct de-esterification of high methoxy pectin aluminum salts was studied in alkaline conditions.The results showed that the degree of esterification,the quality yield and the content of galacturonic acid of pectins decreased with the increase of solution alkaline and the extension of the de-esterification time.When the de-esterification time of the high methoxy pectin aluminum salts in pH 9.0 solution is 30 minutes,the yield of low methoxy pectin was 8.43%(based on dried citrus peel),the content of galacturonic acid and the degree of esterification of the products was 82.5%and 40.5%,respectively.
