摘  要:以花色苷收率为评价指标,采用单因素实验及响应面法优化微波辅助磷酸水溶液提取紫甘薯花色苷的工艺条件,确定最优提取工艺为:微波功率400 W、磷酸浓度1.2%、液料比15∶1(mL∶g)、微波辐照时间4min,在此条件下,紫甘薯花色苷收率达到51.21 mg·(100g)^(-1),与响应面模型预测值[53.61 mg·(100g)^(-1)]的相对误差为-4.48%。HPLC分析结果表明,紫甘薯的微波辅助磷酸水溶液提取液的主要成分与磷酸提取液、柠檬酸提取液基本一致。微波辅助磷酸水溶液提取紫甘薯花色苷具有成本低、省时、节能、环保等特点。Using anthocyanin yield as an evaluation index,we optimized the microwave-assisted extraction process of anthocyanin from purple sweet potato(PSP)with phosphoric acid aqueous solution by a single-factor experiment and response surface methodology.The optimal extraction conditions were as follows:the microwave power of 400 W,the phosphoric acid concentration of 1.2%,the liquid-solid ratio of 15∶1(mL∶g),and the microwave irradiation time of 4 min.Under above conditions,the anthocyanin yield was 51.21 mg·(100 g)-1,and the relative error between the predicted value of response surface model[53.61 mg·(100 g)-1]was-4.48%.Furthermore,HPLC analysis shows that the main ingredients in the extract by microwave-assisted extraction with phosphoric acid aqueous solution are basically the same as those by phosphoric acid extraction and by citric acid extraction.The microwave-assisted extraction of anthocyanin from PSP with phosphoric acid aqueous solution has the advantages of low-cost,short-time,energy-conservation,and being environmentally-friendly.
