摘  要:采用柠檬酸对玉米淀粉进行水解处理,对水解后淀粉吸水、吸油及柠檬黄色素吸附能力进行研究,考察水解温度、柠檬酸用量、水解时间等因素对淀粉吸附性能的影响。试验结果表明,在玉米淀粉用量为50g,蒸馏水用量为300ml,水解温度45℃,水解时间5h,柠檬酸质量浓度为83.3g/L时,水解淀粉的吸水率为70%,吸油量为17%;水解温度45℃,水解时间1h,柠檬酸质量浓度为33.3g/L时,柠檬黄色素吸附量为1.483mg/g。The corn starch was hydrolyzed with citric acid,the water absorption,oil absorption and lemon yellow pigment adsorption capacity of hydrolyzed starch were studied.The effects of hydrolysis temperature,usage amount of citric acid,hydrolysis time and other factors on the adsorption properties of starch were investigated.The results showed that under the conditions of corn starch dosage 50 g,distilled water usage 300 ml,hydrolysis temperature 45℃,hydrolysis time 5 h and the concentration of citric acid 83.3 g/L,the water absorption rate of hydrolyzed starch was 70%,oil absorption was 17%;Under the conditions of hydrolysis temperature 45℃,hydrolysis time 1 h and the concentration of citric acid 33.3 g/L,the adsorption capacity of lemon yellow pigment was 1.483 mg/g.
