摘  要:为了解山东省市售畜禽肉蛋产品中食源性致病菌的污染状况,我们于2017年在山东省德州、临沂、济宁3地市采集畜禽肉蛋样品,共计8类360份样品,并对其中常见食源性致病菌(沙门氏菌、金黄色葡萄球菌、大肠杆菌O157、空肠弯曲杆菌)的污染状况进行分析。结果表明,360份畜禽肉蛋产品中,4种食源性致病菌检出率为40.8%(147/360)。其中,空肠弯曲杆菌在猪肾中检出率最高,为53.8%(7/13);金黄色葡萄球菌在猪肉和牛肉中检出率最高,分别为26.7%(24/90)和26.7%(8/30);沙门氏菌在猪肝中检出率最高,为5.9%(1/17);大肠杆菌O157均未检出。综上,山东省市售畜禽肉蛋产品中污染的食源性致病菌主要以空肠弯曲杆菌和金黄色葡萄球菌为主,建议相关部门针对性加强对畜禽蛋产品市场的监管及风险监测工作。To investigate the contamination situation of food-borne pathogenic bacteria in meat and egg products of livestock and poultry on city markets in Shandong Province,360 samples in total in 8 types of products were collected from Dezhou,Linyi and Jining in 2017,and their contamination situation of common food-borne pathogenic bacteria(Salmonella,Staphylococcus aureus,Escherichia coli O157,Campylobacter jejuni)was analyzed.The results showed that the average detection rate of the 4 bacteria was 40.8%(147/360).Among them,the detection rate of Campylobacter jejuni was the highest in pig kidney(53.8%,7/13);the highest contamination rate of Staphylococcus aureus was found in pork and beef,which was 26.7%(24/90)and 26.7%(8/30),respectively;the highest contamination rate of Salmonella was found in pig liver(5.9%,1/17);Escherichia coli O157 had not been found in any of the samples.In conclusion,Campylobacter jejuni and Staphylococcus aureus were the major food-borne pathogenic bacteria in the livestock and poultry meat and egg products on city markets in Shandong Province.It was suggested that relevant departments should further strengthen the supervision and risk monitoring on livestock and poultry meat and egg products.
