摘　　要：鱼骨粉是鱼类加工下脚料经干燥粉碎后得到的产品,具有高蛋白、低脂肪、矿物质丰富的特点,属于典型的高营养、低热量的产品,具有广阔的应用前景。本文结合鱼骨粉的营养成分与价值、制备工艺、在食品工业中的应用等方面进行综述。Fish bone meal is the product of fish processing waste material after drying and crushing.With high protein,low fat,rich in minerals,Fish bone meal is a typical high-nutrition,low calorie product which has broad application prospects.In this paper,the nutritional value,processing methods and application in fish industry of fish bone meal are reviewed.
