摘  要:大豆种子贮藏蛋白在种子形成过程中逐渐合成和积累,又在种子萌发过程中逐渐降解。不同的大豆贮藏蛋白通过影响蛋白的性质改变其营养和功能品质。包括脂氧酶在内的7S球蛋白与11S球蛋白是构成大豆贮藏蛋白的主要成分,是大豆品质改良的重要目标。本文主要从脂氧酶缺失改良育种、11S球蛋白缺失的高7S球蛋白含量改良、7S球蛋白亚基缺失的高11S球蛋白含量改良、7S球蛋白与脂氧酶双缺失改良等几个方面,介绍大豆主要蛋白组分改良育种的研究进展,以期为中国大豆品质改良育种提供借鉴。Soybean seed storage protein is gradually synthesized and accumulated during seed formation,and gradually degrades during seed germination.Different soybean storage proteins can alter their nutritional and functional qualities by affecting the protein properties.Lipoxygenase is the source of the smell of beans.7S globulin and 11S globulin,including lipoxygenase is the main component of soybean storage proteins,and it has become an important goal for the improvement of soybean quality.This article mainly introduced the latest research progress of genetic soybean protein improvement for lipoxygenase deficiency,11S globulin deficiency coupled with increased 7S globulin content,7 S globulin deficiency coupled with increased 11S globulin content,and 7 S globulin-lipoxygenase double deficiency.It is important to provide reference for quality improvement breeding of Chinese soybean.
