摘 要:探讨评分法和仪器法2种肉色测定方法的相关性,以确定适合于表述评判正常肉与异常肉的特征值。依据《NY/T 821—2004猪肌肉品质测定技术规范》,应用评分法和仪器法2种肉色测定方法,对2014年10月至2017年6月采集的627头猪肉样品进行肉色测定,并对测定结果进行分析。结果表明,评分法快捷方便,但影响因素较多;仪器法测定的L、a、b值能反映出肉样的色彩空间,但需要专业知识方能理解;评分法和仪器法2种方法并行,采用色差计法测得的L值来表述肉色的测定结果更为客观准确适用。评分值与L值的对应关系是:评分值≤1. 5分对应的L值≥60,为PSE肉色;评分值1. 5~2. 5分对应的L值为53~59,趋近于PSE肉色;评分值3. 0~4. 0分对应的L值为37~52,为正常肉色;评分值4. 5~5. 5分对应的L值为31~36,趋近于DFD肉色;评分值6. 0分对应的L值≤30,为DFD肉色。To discover the colour threshold value to distinguish pork from normal and abnormal,in term of the correlation between the scoring method and the instrumentation method,we analyzed the results of 627 pork samples by the instrument from October 2014 to June 2017,which accorded to Agriculture Standard NY/T 821-2004 Technical Regulation for Determination of Pork Quality.The results showed that the scoring method was quick and easy,but easily influenced by many factors.While the Lab value given by instrumentation method could reflect the color space of meat samples,requiring professional knowledge to understand.The corresponding relationship between the score and the L value was that:L value corresponding to≤1.5,score was≥60,PSE flesh color;L value corresponding to 1.5-2.5,score was 53-59,approaching to PSE flesh color;score 3.0-4.0 corresponding to the L value of 37-52,normal flesh color;score 4.5-5.5 corresponding to the L value of 31-36,approaching the DFD flesh color;score 6.0 corresponding to the L value≤30,DFD flesh color.
