摘　　要：不同加工工艺的食品中都常常含有亚硝酸盐,一旦含量超过规定的要求和标准,会对人体健康造成威胁。本研究针对食品中的亚硝酸盐含量进行测定,并且对测定食品中亚硝酸盐含量的影响因素进行分析,最终提出有针对性的安全调控措施,为人们的食品安全提供有效的保障。Nitrite is often contained in foods processed by different processes.Once the content exceeds the prescribed requirements and standards,it will pose a threat to human health.In this study,the content of nitrite in food was determined,and the influencing factors of the determination of nitrite content in food were analyzed.Finally,targeted safety control measures were put forward to provide effective guarantee for food safety.
