摘  要:[目的]调查安阳市小麦籽粒营养品质和卫生安全状况。[方法]在安阳市5个示范区、县选取当地主栽小麦品种进行籽粒、土壤取样,并检测籽粒中的常量元素、微量元素和重金属元素含量。[结果]安阳市小麦籽粒中大量元素全钾平均含量是全国平均值的1.11倍,20%的小麦籽粒蛋白质含量达到中强筋小麦品质指标(国家标准GB/T 17892—2013),其他大量元素含量均与全国平均水平相当;微量元素Zn、B、Se分别高出全国平均水平的22.3%、71.2%和67.4%,其他微量元素略低于全国平均水平;重金属元素Hg、As略高于全国平均值,但所有重金属元素含量均符合GB2672—2012。[结论]安阳市小麦籽粒品质较好,具有一定的营养价值且安全卫生。[Objective]The aim was to investigate the nutritional quality and health safety status of wheat in Anyang City.[Method]In the five demonstration areas and counties of Anyang City,the main wheat varieties were selected for grain and soil sampling,and the contents of macro elements,trace elements and heavy metals in the grains were detected.[Result]The average content of total potassium in wheat grains was1.11times of the national average level,and 20% of the grain quality reached to the quality of strong gluten wheat(GB/T17892-2013)according to protein,the other major elements were equal to the national average level.Among the trace elements,the content of Zn,B,Se were much higher(22.3%,71.2%and 67.4%,separately)than the national average,the others were opposite.The content of Hg and As were higher than national average,but all heavy metal elements were in line with national standards GB 2672-2012.[Conclusion]Wheat grain quality in Anyang City is very well and safe,and has much nutritional value,safety and hygiene.
