摘  要:昌宁野生古树红茶是以野生大理茶鲜叶为原料制成的工夫红茶。大理茶富含水解单宁类化合物,其特征性成分为大理茶素,其化学成分与栽培茶十分接近,茶多酚、咖啡碱的含量略低于栽培大叶茶。通过对不同年份、不同厂家的昌宁野生古树红茶进行感官审评,得出昌宁野生古树红茶整体品质优良,其外形、汤色、香气、滋味均有一定的特点。The ancient trees black tea in Changning is a type of Congou black tea made of Camellia taliensis(W.W.Smith)Melchior in Dali.The tea leaves in Dali,mainly consisted of Dalichasu,are rich in hydrolysable tannins and similar to cultivated tea in chemical contents,though the contents of tea polyphenols and coffeine are slightly lower than cultivated tea.According to the sensory quality results of different Changning ancient trees black tea in various years and sources,Changning ancient trees black tea showed merits in appearance,color,liquor,aroma,etc.
