摘 要:为了提高低度白酒的过滤除浊效率,最大限度地保存低度白酒中的色谱骨架成分,保证低度白酒的质量,使用30 m3/h大流量智能化冷冻过滤机组对低度白酒进行过滤除浊,与50 m3/h的活性炭过滤机进行比对。结果表明,大流量智能化冷冻过滤机组处理的低度白酒感官上窖香幽雅,绵甜爽口,批次间质量稳定,酸酯含量、色谱骨架成分基本一致,生产效率大幅度提升,可应用于低度白酒过滤除浊生产。In order to enhance the turbidity removal efficiency of Baijiu by filtration and keep the principal chromatographic components in Baijiu maximally, 30 m^3/h large-flow intelligent refrigeration filter unit was applied in the filtration of low-alcohol Baijiu. Compared with 50 m^3/h activated carbon filter, low-alcohol Baijiu processed by large-flow filter had elegant aroma and pleasant taste, and there was almost no difference in the content of acids, esters and the principal chromatographic components among Baijiu products of different production batches. The production efficiency got improved greatly at the same time. In conclusion, the large-flow intelligent refrigeration filter unit could be applied for the filtration of low-alcohol Baijiu.
