摘  要:作为补硒来源之一,富硒茶中约80%硒为有机硒,但我国近80%的茶样含硒量在0.2 mg/kg以下,通过人工增硒方法生产富硒茶,对于缓解硒隐性饥饿具有重要价值。从茶树品种、采摘季节、土壤条件等影响天然富硒茶品质的因素和人工富硒茶开发意义、方法、品质变化及机理等方面,综述人工富硒茶研究进展情况。Selenium-enriched tea as one of the sources of selenium supplementation has been studied extensively. About 80% of selenium in tea is organic selenium,but selenium content in nearly 80% of tea samples in China is below 0.2 mg/kg. The production of selenium-enriched tea by artificial selenium enrichment is of great value to alleviate the recessive selenium deficiency. In this paper,the aspects of tea varieties,picking season,soil conditions and other factors affecting the quality of natural selenium-enriched tea was reviewed. And the research progress of artificial selenium-enriched tea was reviewed from the significance,methods,quality changes and mechanism of artificial selenium-enriched tea development.
