摘 要:针对传统"食品工艺学实验"教学过程中存在的不足,将基于问题的学习(Problem Based Learning)和基于项目的学习(Project Based Learning)模式同时引入"食品工艺学实验"教学,构建双PBL教学模式,并将此教学模式在江西农业大学食品学院进行实施。此教学模式能有效引导学生将"食品工艺学"理论知识与实验实践相结合,激发学生的学习兴趣和热情,实施效果显著。In order to solve the problems and shortcomings in the traditional teaching of food technology experiment,the problem-based learning and project-based learning models were introduced into the teaching of Food Technology Experiment at the same time to form an experimental teaching method based on the double PBL model.Students could be effectively guided students to combine the theoretical knowledge of food technology with experimental practice and stimulate students'interest and enthusiasm in learning can be inspired.This new teaching mode has achieved remarkable results in the school of Food Science and Engineering of Jiangxi Agricultural University.
