摘  要:研究壳聚糖涂膜对葡萄低温贮藏品质的影响。以‘红宝石无核’葡萄为研究材料,用不同浓度(0.5%、1%、1.5%)的壳聚糖水溶液涂膜葡萄,以用蒸馏水处理的果实作为对照(CK),低温贮藏,测定贮藏期间葡萄果实失重率、可滴定酸(TA)、可溶性固形物(TSS)、VC、丙二醛(MDA)等的变化。结果表明,1%壳聚糖涂膜可以有效降低‘红宝石无核’葡萄在贮藏期内水分散失速度,减少TA和VC的损失,并抑制MDA的在果实中的积累。试验表明,壳聚糖涂膜是一种有效的葡萄保鲜方法,有着较好的应用前景。The effects of chitosan coating on ‘Ruby Seedless' grapevine in cold storage were studied.‘Ruby Seedless' grapevine fruits were treated with the coating compound with 0.5%, 1%, 1.5% concentration of chitosan, distilled water were served as the control. The weightlessness rate, total acid content, total soluble solids content, vitamin C content, malodialdehyde content were examined. Results showed that with chitosan coating treatment could reduce the weightlessness rate, reduce the loss of total acid and vitamin C of storage grapes, inhibit malodialdehyde accumulation in storage grapes. The results indicated that chitosan coating was an effective method of grape storage and with good application prospect.
