摘  要:从红法夫酵母提取了葡甘露聚糖、虾青素并制备了葡甘露聚糖-虾青素(GM-ASTA)复合物,对其进行了红外光谱、热失重(TGA)和分子对接模拟分析,探讨了GM-ASTA复合物对黄曲霉毒素B1(AFB1)致肉仔鸡肝损伤的影响.结果表明:葡甘露聚糖和虾青素形成了复合物,前者主链通过范德华力和静电力与后者紧密结合.GM-ASTA复合物能显著地改善AFB1导致的肉鸡肝损伤后果,具有吸附AFB1并解除其毒性的双重功效.Glucomannan(GM)and astaxanthin(ASTA)were extracted from Phaffia rhodozyma and their GM-ASTA complex were prepared and investigated by infrared(IR)spectroscopy,thermogravimetric analysis(TGA)and molecular docking simulation analysis.The effects of ASTA complex on aflatoxin B1(AFB1)-induced liver injury in broilers were also discussed.The results indicated that a complex was formed by GM and ASTA,which was combined by van der Waals and electrostatic forces between the GM main chain and ASTA.GM-ASTA complex could significantly improve the liver injury induced by AFB1 in broilers and had the dual effects of absorbing and removing AFB1.
