摘 要:泡沫被誉为“啤酒之花”,是消费者评价啤酒质量的重要外在感官指标。同一种啤酒在不同的啤酒杯型中会有不同的泡沫表现,因此本文系统研究了不同杯型对啤酒泡沫的影响。收集国内外17种啤酒杯,分析啤酒杯的主要参数(杯口直径、径高比、杯高以及有效杯高),并将啤酒杯分为柱型杯、矮胖型杯以及高脚杯三种主要杯型。通过研究不同杯型对起泡性及泡沫挂杯性的影响发现,径高比及杯高是影响起泡性的关键参数,径高比越低、杯高越低,且杯底带激光点,起泡性越好。利用逐步回归建立了杯型参数与起泡性的线性回归方程,R^2值达66%,可有效利用杯型参数预测起泡性。同时分析了杯型对泡沫挂杯性的影响,结果发现低径高比、窄杯口、细杯以及圆滑不带棱的杯型有利于泡沫挂杯持久。Foam, known as the "flower of beer", is an important external sensory index for consumers to evaluate beer quality. This paper systematically studied the effect of different glass shapes on the foam of beer. 17 kinds of beer glasses were collected, and the main parameters of the beer glasses (diameter, diameter to height ratio, height and effective height) were analyzed. The beer glasses were divided into column glass, stout glass and tall glass based on the glass parameters. By studying the effects of different cup shapes on foaming properties and foam durability, it was found that diameter to height ratio and cup height were the key parameters affecting foaming properties. The lower diameter to height ratio and height were beneficial to foaming properties. The linear regression equation of glass shape parameters and foaming properties was established by stepwise regression, and the R square value reached 66%. At the same time, the influence of glass shape on foam durability was analyzed, and it was found that low diameter to height ratio, narrow glass, thin glass and round glass without edge were beneficial to foam durability.
