摘  要:乳酸菌作为公认益生菌,其益生特性使其在食品及医药行业中广泛应用。乳酸菌胞外多糖是乳酸菌产生的一种天然的高分子化合物,对机体有抗氧化、抗突变、抗炎、抗过敏和抗溃疡等生理作用。此外,乳酸菌胞外多糖还可通过调节机体免疫系统来提高机体抗肿瘤作用。随着人们对生活质量以及健康关注度的提高,乳酸菌胞外多糖作为一种安全有效的抗肿瘤和免疫调节物质越来越引起关注,因此,将对乳酸菌胞外多糖的抗肿瘤和免疫调节作用、机制及其关联研究进行综述。Lactic acid bacteria,known as probiotics,was widely used in food and medicine industry due to their probiotic properties. Exopolysaccharides were a kind of natural macromolecule compound produced by lactic acid bacteria which had the physiological effects of anti-oxidation,anti-mutation,anti-inflammation,anti-allergy and anti-ulcer.In addition,the exopolysaccharides of lactic acid bacteria could improve the anti-tumor effect by regulating their immune system.With the improvement of quality of life and health care,exopolysaccharides from lactic acid bacteria as safe and effective antitumor and immunomodulatory substance had attracted more and more attention.The antitumor and immunomodulatory effects of exopolysaccharides from lactic acid bacteria and their mechanism and relevance were reviewed.
