摘 要:动物性食品可为人类提供丰富的蛋白质、脂肪、矿物质和维生素,是人类饮食中不可缺少的部分。然而由于药物在畜牧业中广泛的使用,动物性食品中药物残留量显著增加,甚至出现残留超标,使消费者面临巨大的健康风险。综述了动物性食品中药物残留的来源及其原因、可能造成的潜在危害与影响,介绍了药物残留的检测方法,并提出可实施的防控对策,最后对未来动物性食品的发展进行了展望。Animal food can provide human beings with abundant protein, fat, minerals and vitamins, which are indispensable parts of human diet. However, due to the widespread use of drugs in animal husbandry, drug residues in animal food increased significantly and even exceeded the standard, which caused high healthy risks to consumers. The sources and causes of drug residues in animal food are summarized, the potential hazards and influence in different aspects are stated, the detection methods of residues are introduced, then the strategies of prevention and control are concluded. In addition, present situation of drug residues in animal food at home and abroad is also summarized, and the development of animal food in the future is prospected.
