摘 要:目的了解连云港市市售动物性水产品中致病微生物的污染情况,为相关食源性疾病的预防及控制提供依据。方法采集市售动物性水产品,按照《国家食品污染物和有害因素风险监测工作手册》对致病弧菌、诺如病毒、异尖线虫进行检测。结果 2010-2018年共检测531样本,总体检出率37.10%(197/531),年检出率4.35%~50.85%;动物性海产品、动物性淡水产品检出率分别是24.35%、40.63%,差异有统计学意义;不同类别动物性水产中蛙类污染最重44.44%(12/27),异尖线虫仅在鱼类检出,诺如病毒仅在双壳类检出;不同处理方式动物性水产冰鲜类检出率最高47.23%,冷冻类水产未检出;不同采样地点类型方面农贸市场检出率最高42.26%(172/407),零售加工店未检出。结论连云港市市售动物性水产品中致病弧菌、诺如病毒、异尖线虫均存在不同程度的污染,食品安全部门应加强对农贸市场的监管,关注动物性海产品中异尖线虫的污染,同时冰鲜类、蛙类水产品潜在危害不容忽视。Objective The aim of this study was to understand the pollution of pathogenic microorganism in animal fishery products from markets of Lianyungang, so as to provide reference for preventing and controlling food-borne diseases.Methods Animal fishery products from markets were collected to detect pathogenic vibrio, Norovirus and Anisakis according to manual for China national food contamination and harmful factors risk monitoring. Results 531 samples from 2010 to 2018 were monitored, with the overall detection rate of 37.10%(197/531). Seafood and fresh water products detection rates were 24.35%and 40.63% respectively. In different categories of aquatic products, frogs had heaviest pollution of 44.44%(12/27),Anisakis was reported in only the fish products, and Norovirus was observed only in bivalve products. For different treatments, ice fresh aquatic class had detection rate up to 47.23%(145/307), but frozen aquatic products not detected. The detection rate of farm produce fair was the highest of 42.26%(172/407) during different sampling sites, while the retail processing stores were not checked out. Conclusion The animal fishery products from markets of Lianyungang were polluted by pathogenic vibrio, Norovirus and Anisakis to different extents. The relevant departments must to enhance the hygienic and guidance for farm produce fair and focus on pollution of Anisakis, while the potential harm of frogs and ice fresh aquatic products should not be ignored.
