摘 要:近几年来,经食物传播的细菌性感染疾病处于增多的趋势,各国早已开始密切关注食品安全的问题。噬菌体是细菌的天敌,在很早之前已被人们用来治疗各种细菌性疾病,近几十年来噬菌体在食品工业上的应用也显示出广阔的前景,尤其是在即食食品领域可作为食品添加剂来杀灭食源性致病菌。噬菌体本身具有的宿主特异性特点也说明它是保障食品安全的理想工具。但消费者心中依旧存在很多顾虑和排斥,噬菌体本身是否会对人体有害?噬菌体具有哪些潜在的风险?……为了消除大众对于噬菌体的误解,本文旨在探讨噬菌体自身安全性的问题,并对噬菌体在食品工业中的应用前景进行探讨。In recent years,the spread of foodborne bacterial infections is on the rise.The world has started to pay close attention to food safety issues.Bacteriophages are natural enemies of bacteria and have long been used by people to treat various bacterial diseases.Bacteriophages also have great promise in the food industry,especially in the field of ready-to-eat foods can be used as food additives to kill food-borne pathogens.Host-specific phages themselves also show that they’re the ideal tools to ensure food safety.However,many consumers still have some apprehension and rejection in their minds.Do bacteriophages themselves are harmful to human beings?What are the potential risks of phages?...In order to eliminate the public’s misunderstanding of bacteriophages,this paper aims to explore the issues of bacteriophages self-safety and to explore the prospects of phages in the food industry.
