摘 要:对鲫鱼肉中DHA和EPA进行分析.采用有机溶剂提取鲫鱼肉中脂肪油,将脂肪油中的脂肪酸进行甲酯化,用气相色谱-质谱联用法鉴定鲫鱼肉中的DHA和EPA,并测定其相对百分含量.采用高效液相色谱法定量分析鲫鱼肉中DHA和EPA的含量.DHA的标准偏差为0.67%,EPA的标准偏差为0.38%.DHA的回收率为97.16%~104.20%,EPA的回收率为94.71%~101.10%.实验结果表明:气相色谱-质谱联用法测定鲫鱼肉中含DHA相对百分含量为5.33%,EPA相对百分含量为8.12%;高效液相色谱法测得鲫鱼肉含DHA18.56μg/g,含EPA89.76μg/g.DHA and EPA in carp meat were analyzed.Organic solvent was used to extract fatty oil from carp meat.Fatty acids in fatty oils were methyl esterified.DHA and EPA in carp meat were identified by gas chromatography-mass spectrometry,and their relative percentages were determined.DHA and EPA in carp meat were quantitatively analyzed by HPLC.The standard deviation of DHA was 0.67%,and the standard deviation of EPA was 0.38%.The recovery rate of DHA was 97.16%~104.20%,and that of EPA was 94.71%~101.10%.The results showed that the relative percentage of DHA and EPA in carp meat was 5.33%and 8.12%respectively by gas chromatography-mass spectrometry.The DHA18.56μg/g and EPA89.76μg/g concentrations of carp meat were determined by high performance liquid chromatography.
