摘 要:研究了pH值、温度、光照、紫外线、氧化剂、还原剂、金属离子、糖类、防腐剂等可能影响黑米色素稳定性的因素,经过实验及分析,得出以下结论:黑米色素在酸性条件下和温度低于80℃时稳定性极好;在自然环境的光照下稳定性很不理想,紫外线直射对它的影响不大;氧化剂、还原剂、防腐剂或铁离子会极大影响黑米色素的稳定性,但钠离子、钾离子、镁离子、钙离子、糖类对黑米色素的稳定不造成明显影响。The factors affecting the stability of black rice pigment were studied in the paper from pH, temperature, light, ultraviolet, oxidant, reductant, metal ion, sugar, antiseptic and so on. Through experiments and analysis, it is known that black rice pigment is more stable under acidic conditions and below 80℃. Light has great influence on the stability of black rice pigment, but ultraviolet has little effect on the stability of black rice pigment. The oxidation agent, reducing agent, antiseptic and iron ion have great influence on the stability of black rice pigment, but the effect of sodium ion, potassium ion, magnesium ion, calcium ion and sugar on the stability of black rice pigment is very small. This experiment is of great significance for storing and applying black rice pigment reasonably and effectively.
